做(zuò )法:洗净宰(zǎi )好鲫鱼,洗净淮山和薏米。用清(qīng )水把陈皮泡软(ruǎn ),拍裂一小块姜,热锅,用(yòng )姜(jiāng )块在(zài )锅上(shàng )擦一遍,放两勺油(yóu ),待油六成热下鱼(yú ),煎至微黄(huáng )。煮沸瓦煲里的清水,放入煎(jiān )煮(zhǔ )好的鲫鱼和其(qí )他材料,武(wǔ )火煮沸,转中小(xiǎo )火煲一个半小时,下盐调味即可品尝。 -
