做法:洗净(jìng )宰好鲫鱼,洗净淮山和薏米(mǐ )。用清水把陈皮泡软,拍裂一小块姜,热锅,用姜块在锅(guō )上擦一遍,放两勺油(yóu ),待(dài )油六成热下鱼(yú ),煎(jiān )至微黄。煮沸瓦煲里的清水,放入煎煮好(hǎo )的鲫鱼和其他材(cái )料,武火煮沸,转中(zhōng )小火煲一(yī )个半小(xiǎo )时(shí ),下(xià )盐(yán )调(diào )味即(jí )可品尝。
