做法:春笋切成片后加(jiā )少(shǎo )许(xǔ )盐捞出(chū )后用(yòng )清水浸泡,生姜切(qiē )片,葱切成段。锅烧热(rè ),倒入(rù )2勺油,放(fàng )入生姜、春笋、牛肉片(piàn )、葱段翻炒(chǎo )1分钟左右。再加入(rù )生抽、老抽、蚝(háo )油翻炒均匀,加入少量清水半掩住春笋,盖(gài )上锅盖大火(huǒ )煮开后转(zhuǎn )中火。煮到水(shuǐ )快熬干的时候(hòu )加入盐(yán ),翻炒均(jun1 )匀稍收汁时盖上锅盖焖。
