做法:洗净(jìng )宰好鲫(jì )鱼(yú ),洗净淮山和薏米。用清水把(bǎ )陈皮(pí )泡软,拍(pāi )裂一小(xiǎo )块姜,热(rè )锅,用姜(jiāng )块在锅上擦一遍,放两勺(sháo )油,待油六成热(rè )下鱼,煎至微黄(huáng )。煮沸瓦煲里的(de )清水,放入煎煮好(hǎo )的鲫鱼和(hé )其他(tā )材料,武火煮沸,转(zhuǎn )中小火煲一个半小时,下盐调味即可品尝(cháng )。
