做法:春笋切成片后加(jiā )少许盐捞出(chū )后用清水浸泡,生姜切片,葱切成段(duàn )。锅烧热,倒(dǎo )入2勺油,放(fàng )入生姜、春(chūn )笋、牛肉片、葱段翻炒1分(fèn )钟左右。再加(jiā )入生抽、老抽、蚝(háo )油翻炒(chǎo )均匀,加入少量(liàng )清水(shuǐ )半掩住春笋,盖上(shàng )锅(guō )盖大火煮(zhǔ )开后转中火。煮到(dào )水快熬干的时候加入(rù )盐,翻炒均匀稍收汁(zhī )时盖上锅(guō )盖(gài )焖。
