做法:洗(xǐ )净宰好鲫鱼,洗净淮山和(hé )薏米(mǐ )。用清水(shuǐ )把(bǎ )陈皮泡软,拍裂一(yī )小(xiǎo )块姜,热锅,用(yòng )姜块在(zài )锅上擦一(yī )遍,放两(liǎng )勺油,待油六成热下鱼,煎至微黄。煮沸瓦煲里的清水(shuǐ ),放入煎煮好的鲫鱼和其他材料,武火煮沸,转中(zhōng )小火煲一个半(bàn )小(xiǎo )时,下盐(yán )调味即可品尝。
