做法:春笋切成片后加少许盐捞出后(hòu )用清水浸泡(pào ),生姜(jiāng )切片,葱切成段。锅烧(shāo )热,倒入2勺油,放入生姜(jiāng )、春笋、牛肉片、葱段(duàn )翻(fān )炒1分钟左右。再加(jiā )入生(shēng )抽、老抽、蚝油翻(fān )炒均匀,加(jiā )入(rù )少量清水半(bàn )掩住春笋(sǔn ),盖上锅盖大火煮开后转中火。煮到(dào )水快(kuài )熬干的时候加入盐,翻炒(chǎo )均(jun1 )匀稍(shāo )收(shōu )汁时盖上锅盖焖。
