做(zuò )法:春笋切(qiē )成片后加(jiā )少许盐(yán )捞出后用清(qīng )水浸泡,生姜(jiāng )切片,葱(cōng )切成(chéng )段。锅烧(shāo )热,倒入2勺油,放入生姜、春笋、牛(niú )肉片(piàn )、葱段翻炒1分钟(zhōng )左(zuǒ )右。再加入生抽、老抽、蚝油(yóu )翻炒均匀,加入(rù )少量清(qīng )水半掩住春笋,盖上锅盖大(dà )火煮开后(hòu )转中火。煮到水快熬干的时候加入盐(yán ),翻炒均匀稍收汁时盖上锅盖焖(mèn )。
