做(zuò )法:春笋切成片(piàn )后加少(shǎo )许盐捞出后(hòu )用清水(shuǐ )浸泡,生姜切(qiē )片,葱(cōng )切成段(duàn )。锅烧热,倒入2勺(sháo )油(yóu ),放入生(shēng )姜、春笋、牛肉片、葱段翻炒1分钟左右。再加(jiā )入生抽、老抽(chōu )、蚝油翻炒均匀,加入少量清水半(bàn )掩住春笋,盖(gài )上(shàng )锅(guō )盖大火煮开后(hòu )转中火。煮到水快熬干的时候加入(rù )盐,翻(fān )炒均匀稍收汁时盖上锅盖焖。
