做法:春(chūn )笋切成片后加少(shǎo )许盐捞出后用清水浸泡,生姜切(qiē )片,葱切成段。锅烧(shāo )热,倒入2勺油,放入(rù )生姜、春笋、牛(niú )肉片、葱段(duàn )翻炒1分钟左右。再加(jiā )入生(shēng )抽、老抽、蚝油翻炒均匀(yún ),加(jiā )入少量清水(shuǐ )半掩(yǎn )住春笋,盖(gài )上锅(guō )盖大(dà )火煮开后转中火。煮到水快熬干的时候加入盐,翻炒均匀(yún )稍收(shōu )汁时盖上锅盖焖。
