做(zuò )法:春笋切(qiē )成片后加少许盐捞出(chū )后用清水浸泡,生(shēng )姜切片,葱切成段。锅(guō )烧热,倒入2勺油,放入生姜、春笋、牛肉片、葱段翻炒1分(fèn )钟(zhōng )左(zuǒ )右。再加入生抽、老(lǎo )抽、蚝油(yóu )翻炒均匀,加入少量清(qīng )水半(bàn )掩住春笋,盖上锅盖大火煮开(kāi )后转中(zhōng )火。煮到(dào )水快熬干的时候加入盐,翻(fān )炒(chǎo )均(jun1 )匀稍收汁时(shí )盖上锅盖焖(mèn )。
