做法:洗(xǐ )净(jìng )宰好鲫鱼,洗净淮山和薏米。用(yòng )清水把陈皮泡软,拍(pāi )裂一小块姜(jiāng ),热锅,用姜块在锅上(shàng )擦一遍,放两勺油,待油(yóu )六成热下鱼,煎至微黄(huáng )。煮沸瓦(wǎ )煲里的清(qīng )水,放(fàng )入煎(jiān )煮好的鲫鱼和其他(tā )材料,武火煮沸,转中小(xiǎo )火煲一个半小时,下盐(yán )调味即可品尝。
