做法(fǎ ):春笋切(qiē )成片后加少许盐捞出(chū )后用清水浸泡,生(shēng )姜(jiāng )切片,葱切成段(duàn )。锅烧热,倒入2勺油,放入生姜、春笋、牛肉片、葱段翻炒1分钟左右。再加(jiā )入生抽、老抽、蚝(háo )油翻炒均匀(yún ),加入少(shǎo )量清水半掩住春笋,盖上锅盖大火煮开(kāi )后转(zhuǎn )中火。煮(zhǔ )到水(shuǐ )快熬(áo )干(gàn )的时候(hòu )加入盐,翻炒均匀稍收汁时盖上锅(guō )盖焖。
