做(zuò )法:春笋切成片后加少许盐捞出后用清(qīng )水浸泡,生(shēng )姜切片,葱切成段。锅烧热,倒(dǎo )入(rù )2勺油,放入生姜、春笋、牛肉(ròu )片、葱段翻(fān )炒1分钟左右。再加入生抽、老抽、蚝油翻炒(chǎo )均匀(yún ),加入少量清水半掩(yǎn )住春(chūn )笋,盖上(shàng )锅盖大火煮开后转中火。煮到水(shuǐ )快熬干的时候加入盐,翻炒均(jun1 )匀稍收(shōu )汁时盖(gài )上(shàng )锅盖焖。
