做法:洗(xǐ )净宰好鲫鱼,洗净(jìng )淮山和薏米(mǐ )。用清水把陈皮泡软,拍裂一小(xiǎo )块姜,热(rè )锅,用(yòng )姜块在锅上(shàng )擦一遍(biàn ),放两勺油,待油六成热下鱼,煎至微黄。煮(zhǔ )沸瓦煲(bāo )里的清水,放入煎煮好(hǎo )的鲫鱼和(hé )其(qí )他(tā )材(cái )料,武火煮沸,转(zhuǎn )中小火煲一个半小时(shí ),下盐调味即可品尝。 -
