做法:春笋切成片后加少(shǎo )许盐捞出后用清水浸泡(pào ),生姜切片(piàn ),葱切成段。锅烧热,倒(dǎo )入2勺油,放入生姜、春笋、牛肉片、葱段翻炒(chǎo )1分钟(zhōng )左右(yòu )。再加入生抽、老抽、蚝油翻(fān )炒均匀(yún ),加(jiā )入少(shǎo )量清水半掩(yǎn )住春笋,盖上锅(guō )盖大火煮开后(hòu )转中(zhōng )火。煮到水(shuǐ )快熬干的时候加入盐(yán ),翻炒均匀稍收汁时盖上锅盖焖。
