做法:洗净(jìng )宰好(hǎo )鲫(jì )鱼,洗净淮山和薏米。用清水把(bǎ )陈皮泡软,拍(pāi )裂一小块姜,热锅,用姜(jiāng )块在锅上(shàng )擦一遍,放两勺油,待(dài )油六成热下(xià )鱼,煎至微(wēi )黄。煮(zhǔ )沸瓦(wǎ )煲里的清水,放入煎煮好(hǎo )的鲫(jì )鱼和其(qí )他材(cái )料,武火煮沸,转中小火煲一个(gè )半小时,下盐调味即可品尝。
