做法:春笋(sǔn )切成片后加少许盐捞(lāo )出后用清水浸泡,生姜切片,葱切(qiē )成段。锅烧热,倒入(rù )2勺油,放入生(shēng )姜(jiāng )、春笋(sǔn )、牛肉片(piàn )、葱段翻炒(chǎo )1分钟(zhōng )左右。再加入(rù )生(shēng )抽、老抽、蚝油翻炒均匀(yún ),加入少量清水半掩(yǎn )住春笋,盖上锅盖大(dà )火煮(zhǔ )开后转中火。煮到水快熬干的时候加入盐,翻炒均匀稍收汁时(shí )盖上(shàng )锅盖(gài )焖。
