做法:洗净宰好鲫鱼,洗(xǐ )净(jìng )淮山和薏米。用清水把陈皮泡软(ruǎn ),拍(pāi )裂(liè )一小块姜,热(rè )锅(guō ),用姜块在锅上擦一遍,放两勺油(yóu ),待(dài )油(yóu )六(liù )成热下鱼,煎至微黄(huáng )。煮沸瓦煲里的清水,放入煎煮好的鲫鱼和其他(tā )材(cái )料,武火煮沸,转中小火(huǒ )煲(bāo )一个半(bàn )小时,下盐调味即可品尝。
