做(zuò )法(fǎ ):春笋切成(chéng )片后加少许盐(yán )捞出后(hòu )用清水浸泡,生姜切片,葱(cōng )切成段。锅烧热,倒(dǎo )入2勺(sháo )油,放(fàng )入生姜(jiāng )、春笋、牛肉片(piàn )、葱段(duàn )翻炒1分钟左右。再(zài )加入生抽、老抽(chōu )、蚝油翻炒均匀,加入少量清水半(bàn )掩住(zhù )春笋,盖上锅盖大火煮开后转中火(huǒ )。煮到水快熬干的时(shí )候加入(rù )盐,翻炒均匀稍收汁时盖上锅盖(gài )焖。 -
