做法:春笋切成(chéng )片(piàn )后加少许盐(yán )捞(lāo )出后用清水(shuǐ )浸泡,生姜切片,葱切(qiē )成段。锅烧热(rè ),倒入2勺油,放入生姜、春笋(sǔn )、牛肉片、葱段翻炒1分钟左右。再加入(rù )生抽、老抽、蚝(háo )油翻炒均匀,加入少量清水(shuǐ )半掩住(zhù )春笋,盖上(shàng )锅盖(gài )大火煮开后(hòu )转中火。煮到水快熬干的时候加入盐,翻炒均匀稍收汁时(shí )盖上锅盖焖。
