做(zuò )法:洗(xǐ )净宰好鲫(jì )鱼,洗净淮山和薏米。用清水(shuǐ )把(bǎ )陈(chén )皮泡软,拍(pāi )裂一小(xiǎo )块姜,热锅,用姜(jiāng )块在(zài )锅上擦一遍,放两勺油,待油六成热下鱼,煎至微黄。煮沸瓦(wǎ )煲(bāo )里的清水,放入煎(jiān )煮好的鲫鱼和其他材(cái )料,武火煮沸,转中小火煲(bāo )一(yī )个半小时,下盐调(diào )味即可品尝。
