做法(fǎ ):春(chūn )笋切成片后加少许盐捞出(chū )后用清水浸泡(pào ),生(shēng )姜切片,葱(cōng )切成(chéng )段(duàn )。锅烧热,倒入(rù )2勺油,放入生姜、春笋(sǔn )、牛肉片(piàn )、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加入少量清(qīng )水半掩住春(chūn )笋,盖(gài )上锅盖大火煮开后转中火。煮到(dào )水快熬干的时候加(jiā )入盐,翻炒(chǎo )均匀稍收汁(zhī )时盖上锅(guō )盖焖。
