做(zuò )法:春(chūn )笋切成片后加少(shǎo )许盐捞出后用(yòng )清水浸泡,生姜切片(piàn ),葱切成段。锅烧热,倒入2勺油,放入生姜、春(chūn )笋、牛肉片、葱段(duàn )翻(fān )炒1分钟左右。再加(jiā )入生(shēng )抽、老抽、蚝油翻炒均匀,加入(rù )少量(liàng )清水半掩住春笋,盖上(shàng )锅盖大火煮开后转中火。煮(zhǔ )到水快熬干的时候加入盐,翻炒均匀(yún )稍收汁时盖上锅盖焖。
