做法:洗净宰好鲫鱼,洗净淮(huái )山和薏米(mǐ )。用清水把(bǎ )陈皮泡(pào )软(ruǎn ),拍裂一小块姜(jiāng ),热锅,用姜块在锅上(shàng )擦(cā )一遍,放两勺油,待油六成热下鱼,煎至微(wēi )黄。煮沸瓦煲里的清水,放(fàng )入煎煮(zhǔ )好的鲫鱼和(hé )其他(tā )材(cái )料(liào ),武火煮沸,转中小(xiǎo )火煲一个半小时,下盐调味即(jí )可品尝。
