做(zuò )法:春笋切成片后加少许盐捞(lāo )出后用清水浸泡,生姜(jiāng )切片,葱(cōng )切成段。锅(guō )烧(shāo )热,倒入2勺油,放入生姜、春笋、牛肉片(piàn )、葱段翻炒1分钟左右(yòu )。再加入生(shēng )抽、老抽、蚝油翻(fān )炒均匀,加入(rù )少量清水(shuǐ )半(bàn )掩住春笋,盖(gài )上锅(guō )盖大火(huǒ )煮(zhǔ )开后转中火。煮到水快熬(áo )干的时候(hòu )加入盐,翻炒均匀稍收汁时盖(gài )上锅盖焖。 -
