做法(fǎ ):洗(xǐ )净宰好鲫鱼,洗净(jìng )淮山和薏米。用清水把陈(chén )皮泡软,拍裂一小块姜,热锅,用姜(jiāng )块在锅上擦一遍,放两勺油,待油六成热(rè )下(xià )鱼,煎至微黄。煮(zhǔ )沸瓦煲(bāo )里的清水,放(fàng )入煎(jiān )煮好的鲫鱼和其他(tā )材料,武(wǔ )火(huǒ )煮沸,转中小火煲一个半(bàn )小(xiǎo )时,下盐(yán )调味即可品尝。 -
