做法:洗净宰好鲫鱼,洗净淮山和薏(yì )米(mǐ )。用(yòng )清水(shuǐ )把陈皮泡软(ruǎn ),拍裂一小块姜(jiāng ),热锅,用姜块在(zài )锅(guō )上(shàng )擦一遍,放两勺油,待油六成热下鱼(yú ),煎至微黄。煮(zhǔ )沸瓦煲里(lǐ )的清(qīng )水,放入(rù )煎煮好的鲫鱼和其他材(cái )料,武火煮沸,转中小火煲一个半小时,下盐调味即可(kě )品(pǐn )尝。 -
