做法(fǎ ):洗净宰(zǎi )好(hǎo )鲫鱼,洗净淮山和薏米。用清水把陈(chén )皮泡软,拍裂(liè )一小块姜,热锅(guō ),用姜(jiāng )块在锅上擦一遍,放(fàng )两勺(sháo )油,待油六成热下鱼,煎至微黄。煮沸瓦煲里的清(qīng )水,放入煎煮好(hǎo )的鲫鱼和其他材(cái )料,武火煮沸,转中小(xiǎo )火煲一个(gè )半小时(shí ),下盐调味即可品尝。
