做(zuò )法:洗净(jìng )宰好鲫(jì )鱼,洗(xǐ )净淮山和薏米。用清水把陈皮泡软,拍裂一(yī )小(xiǎo )块姜,热锅,用姜(jiāng )块在锅上擦一遍(biàn ),放两勺油,待油六成热下鱼,煎至(zhì )微黄。煮沸瓦煲里的清水,放入煎煮(zhǔ )好的鲫(jì )鱼和其他材(cái )料(liào ),武火煮(zhǔ )沸,转中小火(huǒ )煲一个半小(xiǎo )时,下盐调味即可品尝。
