做(zuò )法:春笋切成片后加少许盐捞出后用清水(shuǐ )浸(jìn )泡,生姜切(qiē )片(piàn ),葱(cōng )切成段。锅烧热,倒入2勺油,放(fàng )入生姜、春笋、牛肉片、葱段(duàn )翻(fān )炒(chǎo )1分钟(zhōng )左右。再加入生抽、老抽、蚝油(yóu )翻炒均匀,加入少量清水半掩住春笋,盖上锅(guō )盖大火(huǒ )煮开(kāi )后转中(zhōng )火。煮到水快熬干的时候加入盐,翻炒均匀稍收汁时盖上锅盖(gài )焖(mèn )。
