做法(fǎ ):洗净宰好鲫鱼,洗净淮山和薏米。用清水把(bǎ )陈皮泡软,拍裂一小块姜,热(rè )锅,用姜块在(zài )锅上擦一遍,放两勺油(yóu ),待油六成热下鱼,煎至微黄。煮(zhǔ )沸瓦煲(bāo )里的清水,放入煎煮好(hǎo )的(de )鲫鱼和其他材料,武火(huǒ )煮沸,转中(zhōng )小火煲一(yī )个(gè )半(bàn )小(xiǎo )时,下盐(yán )调味即可品尝。
