做法(fǎ ):春(chūn )笋切成片后(hòu )加(jiā )少(shǎo )许盐(yán )捞出后用(yòng )清水浸泡,生姜切片,葱切成段。锅烧热(rè ),倒入2勺油,放入(rù )生(shēng )姜、春笋、牛肉片、葱(cōng )段(duàn )翻炒1分钟左右。再加入生抽(chōu )、老抽、蚝(háo )油翻炒均匀(yún ),加入(rù )少量清水半掩住春(chūn )笋,盖上锅盖大(dà )火煮开后(hòu )转中火。煮到水快熬干的时候加入盐,翻炒均匀稍收汁时盖上锅(guō )盖焖。
