做法:洗(xǐ )净宰好鲫鱼,洗净淮山和薏(yì )米。用清(qīng )水把陈皮泡软(ruǎn ),拍裂(liè )一小块姜(jiāng ),热(rè )锅,用姜(jiāng )块在锅上擦一(yī )遍,放两勺油,待油六成热下鱼,煎至微(wēi )黄(huáng )。煮沸瓦煲里的清水,放入煎煮好(hǎo )的鲫鱼和其他材料,武(wǔ )火煮沸,转中小火煲一(yī )个半小时,下盐调(diào )味(wèi )即(jí )可品(pǐn )尝。
