做法:春笋切成片(piàn )后加少许盐捞出后(hòu )用清水浸泡(pào ),生姜切片,葱切成段(duàn )。锅烧热,倒入2勺油,放入生姜、春笋、牛肉片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油翻(fān )炒(chǎo )均匀,加入少量清(qīng )水半掩(yǎn )住春笋,盖上锅(guō )盖大(dà )火煮开后转中火(huǒ )。煮到(dào )水快(kuài )熬干的时(shí )候(hòu )加(jiā )入盐,翻炒均匀稍收汁时盖上(shàng )锅盖焖。
