做法:春笋(sǔn )切成片后加少许盐捞出(chū )后用清水浸泡,生姜切片,葱切成段。锅烧热,倒(dǎo )入2勺油,放入生姜、春笋、牛(niú )肉片、葱(cōng )段翻炒1分(fèn )钟(zhōng )左右。再加(jiā )入生(shēng )抽、老(lǎo )抽、蚝油翻炒均匀,加入少量清(qīng )水半掩住春(chūn )笋,盖上锅盖大火煮开后转(zhuǎn )中火(huǒ )。煮到水快熬干的时候加入盐,翻炒均匀(yún )稍(shāo )收汁时盖上(shàng )锅盖焖。
