做法:春笋切成片后(hòu )加(jiā )少(shǎo )许(xǔ )盐捞出后用清水浸泡,生姜切片,葱切成段。锅烧(shāo )热,倒入2勺油,放入生姜、春笋、牛(niú )肉片、葱段翻炒1分(fèn )钟(zhōng )左右。再加入(rù )生抽(chōu )、老抽、蚝(háo )油翻炒均匀,加入少量清水(shuǐ )半(bàn )掩住春笋,盖上锅盖大火(huǒ )煮开后(hòu )转中火。煮到水快熬干的时(shí )候加入盐,翻炒(chǎo )均匀稍收汁时盖(gài )上锅盖(gài )焖(mèn )。
