做法:春笋切成片后加少(shǎo )许盐捞出后用清水浸泡,生姜切(qiē )片,葱切成段。锅(guō )烧(shāo )热,倒入2勺油,放入生(shēng )姜、春笋、牛肉片、葱段翻炒(chǎo )1分钟左右。再加入生抽、老抽(chōu )、蚝油翻(fān )炒均匀,加入(rù )少量清水半(bàn )掩住春笋,盖(gài )上锅盖大(dà )火煮开后转中(zhōng )火。煮到(dào )水快熬(áo )干的(de )时(shí )候加(jiā )入(rù )盐,翻炒均匀稍收汁时盖上锅(guō )盖焖。
