做(zuò )法:春笋切成(chéng )片后加少(shǎo )许盐捞出后用清水浸(jìn )泡(pào ),生姜切片,葱(cōng )切成段。锅烧热,倒入2勺油(yóu ),放入生姜、春笋、牛肉片、葱段翻炒(chǎo )1分钟左(zuǒ )右。再加入生抽、老抽、蚝油翻(fān )炒均匀,加入(rù )少量清水半掩住春笋,盖上(shàng )锅盖大(dà )火煮开后转中火。煮到水(shuǐ )快熬干的时(shí )候加入盐(yán ),翻炒均匀稍收汁时(shí )盖上锅盖焖。
