做法:洗净宰(zǎi )好(hǎo )鲫(jì )鱼,洗净淮山和薏(yì )米。用清水(shuǐ )把陈皮(pí )泡(pào )软(ruǎn ),拍裂一小块(kuài )姜,热锅,用姜(jiāng )块在(zài )锅上擦(cā )一遍,放两勺油,待油六成热下鱼,煎至(zhì )微黄。煮沸瓦煲里的清水,放入煎煮好的鲫鱼和其(qí )他材料,武火煮(zhǔ )沸,转中小火煲一个半小时(shí ),下盐调味即可品尝。
