做法:春笋切成片后加少许盐捞出(chū )后(hòu )用清水(shuǐ )浸(jìn )泡,生姜切片,葱切成段。锅烧热,倒入2勺油,放(fàng )入生姜、春笋、牛肉片、葱段(duàn )翻炒1分钟左右。再加入生抽(chōu )、老抽、蚝油翻炒均匀,加入(rù )少量清(qīng )水(shuǐ )半掩住(zhù )春笋,盖上(shàng )锅盖(gài )大火煮开后转中火。煮(zhǔ )到水快熬干的时候(hòu )加入盐,翻炒均匀稍收(shōu )汁时盖上锅盖(gài )焖。
