做法(fǎ ):洗净宰好鲫鱼,洗净淮山和薏米(mǐ )。用清水把陈皮泡软(ruǎn ),拍裂一小(xiǎo )块姜,热锅,用(yòng )姜块(kuài )在锅上擦一(yī )遍(biàn ),放两勺(sháo )油,待油六成热下鱼,煎至微黄。煮沸瓦煲里的清水(shuǐ ),放入煎煮好的鲫鱼和其他材料,武火煮沸,转中(zhōng )小火煲一个半(bàn )小(xiǎo )时,下盐(yán )调味即可品(pǐn )尝。
