做法(fǎ ):春笋切成片后加少许盐捞出后用清(qīng )水浸泡,生姜(jiāng )切(qiē )片,葱切成段(duàn )。锅烧热(rè ),倒入2勺油,放(fàng )入生姜、春(chūn )笋、牛肉(ròu )片、葱段翻炒1分(fèn )钟左右。再加(jiā )入生抽、老抽、蚝油翻炒均匀(yún ),加(jiā )入少(shǎo )量清水半掩住春笋,盖上锅盖大火煮开后转中(zhōng )火。煮到水(shuǐ )快熬干的时候加(jiā )入盐,翻(fān )炒均匀(yún )稍收汁时盖上锅盖焖。
