做法:洗净宰好鲫鱼,洗净淮山(shān )和薏(yì )米。用清水把陈皮泡(pào )软(ruǎn ),拍裂一小块姜,热锅,用(yòng )姜(jiāng )块在锅上(shàng )擦一遍,放两(liǎng )勺油,待(dài )油(yóu )六成热下鱼,煎至微黄。煮(zhǔ )沸瓦煲里的清水(shuǐ ),放入煎煮好的鲫鱼和其(qí )他材料,武(wǔ )火煮沸,转中小火煲一个半小(xiǎo )时,下盐(yán )调味即可品尝(cháng )。
