做法(fǎ ):春笋切成片后(hòu )加少许盐捞出后用清水浸泡,生姜(jiāng )切(qiē )片,葱切成段。锅烧热(rè ),倒入2勺油,放入生姜、春笋(sǔn )、牛肉片、葱段翻炒(chǎo )1分钟(zhōng )左(zuǒ )右。再加入生抽、老抽、蚝油翻炒均匀,加(jiā )入少量清水半掩住春笋,盖(gài )上锅盖大火煮开后转中(zhōng )火。煮到水快熬干的时候加入盐,翻炒均匀稍(shāo )收汁时(shí )盖(gài )上(shàng )锅(guō )盖焖。
