做法:洗(xǐ )净宰好鲫鱼(yú ),洗(xǐ )净(jìng )淮(huái )山和薏米。用清水把陈(chén )皮(pí )泡软,拍裂一小块姜,热锅,用姜块在(zài )锅上擦一遍,放两勺油,待油六成热(rè )下鱼,煎至微黄。煮沸瓦煲里的清水(shuǐ ),放入煎煮(zhǔ )好的鲫鱼和其(qí )他材(cái )料,武火煮(zhǔ )沸,转中小火(huǒ )煲一个半小时,下(xià )盐(yán )调味(wèi )即可品尝。
