做法:春笋切成片后加少许盐捞(lāo )出(chū )后用(yòng )清水浸泡,生姜切片,葱切成段。锅烧热,倒入2勺油,放入(rù )生姜、春笋、牛肉片、葱段翻(fān )炒1分钟(zhōng )左右。再加入生抽、老抽、蚝油翻炒均(jun1 )匀,加入少量清水半(bàn )掩住春笋,盖上(shàng )锅盖大火煮(zhǔ )开(kāi )后转(zhuǎn )中火。煮到(dào )水快熬(áo )干的时候加入(rù )盐,翻炒均(jun1 )匀稍收(shōu )汁时(shí )盖上锅盖(gài )焖。
