做(zuò )法:春(chūn )笋切成片后加少许盐捞出后用清水浸泡,生姜(jiāng )切片,葱切(qiē )成段。锅烧(shāo )热(rè ),倒(dǎo )入2勺油,放入生姜、春笋、牛肉片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加入少量清水半掩住春笋,盖上(shàng )锅盖大火煮(zhǔ )开后转(zhuǎn )中火。煮到水快熬(áo )干的(de )时(shí )候加(jiā )入盐,翻炒均匀(yún )稍收汁时盖上(shàng )锅盖焖(mèn )。
