做法:春(chūn )笋切成片后加少许(xǔ )盐捞出(chū )后(hòu )用(yòng )清水(shuǐ )浸泡,生(shēng )姜(jiāng )切片(piàn ),葱切成段。锅烧热,倒入2勺油,放入生姜、春笋、牛肉片、葱段翻炒1分钟左右。再加(jiā )入生抽、老抽、蚝(háo )油翻炒均匀,加入(rù )少量清水半掩住春(chūn )笋,盖(gài )上锅盖大火煮开后(hòu )转中火。煮到水(shuǐ )快(kuài )熬干的时候(hòu )加入(rù )盐,翻炒均匀稍收汁时盖(gài )上锅盖焖。
