做法:春笋切成片后加少许盐(yán )捞出后用清水浸泡,生(shēng )姜切片,葱切成段(duàn )。锅(guō )烧(shāo )热,倒入(rù )2勺油(yóu ),放(fàng )入生姜、春笋、牛肉片(piàn )、葱段翻炒1分(fèn )钟左右。再加入(rù )生抽、老抽(chōu )、蚝(háo )油翻炒均匀,加入少量清水半掩住春(chūn )笋,盖上锅盖大火煮开后转中火。煮到水(shuǐ )快熬干的时候(hòu )加入(rù )盐,翻炒均匀稍收汁时盖(gài )上锅盖(gài )焖。
